Peppermint Bark
Peppermint Bark is my favorite holiday item, thanks to Williams Sonoma. It is so easy to make, I just started making it myself. Peppermint Bark is extremely easy to make, the most difficult part for me was finding the peppermint extract. I would strongly suggest using Ghirardelli Chocolate. It makes the peppermint bark taste a lot better. If you have a local chocolate shop that has their own bulk chocolate, it would be even better!
Ingredients:
11 oz bag of semi-sweet chocolate chips
11 oz bag of white chocolate chips
2 teaspoons canola oil, divided
1 teaspoon peppermint extract, divided
5 candy canes, crushed, keep larger size pieces
Grease a 9 x 13" pan. Put a glass bowl over the top of a pot with 1" simmering water to create a double boiler. In glass bowl combine semi sweet chocolate chips, 1 teaspoon oil and 1/2 teaspoon peppermint extract. Stir until melted, pour into pan. Put in freezer until solid.
Repeat with white chocolate chips. Make sure the semi sweet chocolate is frozen. This will keep the white and darker chocolate from swirling together. Top white chocolate with crushed candy cane immediately. Freeze until totally solid. Break up and serve. Can be served cold or at room temperature. I store mine in the freezer, it allows the peppermint bark to store for a couple of weeks.
