Banana Bread

This is a very basic banana bread recipe that came from my mom.  The banana bread comes out moist and tasteful every time.

Ingredients:

1 cup sugar
1 stick of butter
2 eggs
3 ripe bananas (smashed)
1 tablespoon milk
1 teaspoon cinnamon
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoon vanilla
Walnuts are optional

Preheat oven to 350 degrees.  Beat butter and sugar together, adding eggs one at a time.  Slowly add in bananas, making sure to scrape the sides of the bowl.  Add milk and vanilla, followed by dry ingredients.  Mix together well, and pour into a greased loaf pan.  Bake for about 45-55 min or until a toothpick comes out of the middle clean.

Whipped Cream Horseradish Sauce

Recipe Adapted from Nordstrom Entertaining at Home Cookbook
 I love horseradish, so decided to give this a try.  It was very fluffy and added a lot of flavor to the meat.  If you like horseradish, I would suggest adding more than what the recipe calls for.

Ingredients:
2 cups heavy whipping cream
1/2 cup sour cream
1/2 cup prepared horseradish
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco
1/2 teaspoon salt
1/2 teaspoon freshly ground white pepper

Use an electric mixer set on high speed, beat cream until soft peaks form.  Using a rubber spatula, fold in the remaining ingredients until evenly distributed. Continue beating until the mixture is light and fluffy, like dense whipped cream, about 1 minute.

Lemon Bread

Adapted from Home Style Bread Making


Very refreshing Lemon bread.  It is more of a pound cake than a bread and great for desserts! I matched mine with strawberries and served as dessert.

Ingredients:
1 stick unsalted butter, softened
1/2 cup heavy whipping cream
1/2 cup water
1 cup granulated sugar
2 large eggs
zest of 1 lemon
1 tablespoon fresh lemon juice
2 cups unbleached all purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla extract

Mix together butter, sugar, eggs and vanilla.  Add in whipping cream, water, lemon zest and juice.  Scrape the sides of the bowl to mix everything together.  Add in dry ingredients.
Preheat oven to 350 degrees.  Spray loaf pan with non stick cooking spray.  Bake for around 45 minutes, until middle is firm.
Once removed from oven, let cool for around 15 minutes, remove from pan, place on cooling rack.  Use a knife to cut around the loaf before you tip to remove.  Poke holes in the top with tooth picks to absorb glaze.  Slowly pour glaze over the top of the loaf.

Glaze:
1 1/2 cups powdered sugar
1 tablespoon fresh lemon juice
1 tablespoon water
